Oh summer, summer, summer . . .Where have you gone? As I sit here in my garden chair —surveying the red-tipped Viburnum leaves and orange-tinted Flame Grass— once again I marvel at the quick passage of time. In just a few short hours, autumn will officially begin in the Northern Hemisphere, (20:44 UTC or 4:44 pm ET). Much as I love the fall —always my favorite season— this year I feel more than a touch of melancholy as I let sweet summer go.

Although this has been a rather cool and rainy season, the months were also filled with warm riches and delights; kayaking on the river, a trip to Block Island, Christmas-in-July fireworks, a picnic in the orchard at Scott Farm, milestone family birthdays, and exciting projects at work. This has also been a year of culinary exploration and adventures thanks to delightful produce from my kitchen garden and fruit from nearby farms.

Recently, after picking up fresh, late-season peaches from Zeke Goodband at Scott Farm, in Dummerston, Vermont, I decided to experiment with savory recipes featuring this delightful fruit. Grilling peaches has always been a favorite late-summer pastime, and after sampling a delicious appetizer of blue cheese, caramelized onion and pecan stuffed peaches at Magpie Restaurant in nearby Greenfield, Massachusetts, I decided to give the idea a whirl. Simple to prepare and delicious as an appetizer or side dish, these grilled, stuffed peaches are the perfect way to say farewell to summertime.

So as we listen to the swan-song of summer —crickets in the meadow and bluejays in the scrub— here’s a touch of sweetness to send the gentle season on her way . . .

Grilled Peaches with Blue Cheese, Caramelized Onions, Toasted Pecans & Balsamic Glaze

 Appetizer or Light Side for Six

Ingredients

6 Large Gloria Peaches (sliced in half & pitted, skin on)

1/8 cup Pecans (toasted, chopped fine)

1 small, sweet onion, caramelized and chopped fine

1/4 cup Crumbled Blue Cheese (or more)

Salt to taste

Butter for Grilling

Balsamic Glaze for Drizzling Platter

Method

Caramelize onions, chop/toast pecans, and crumble high-quality blue cheese in advance. Mix the three ingredients together in a small bowl and salt lightly to taste. Set aside.

Slice and pit peaches. Scoop out center neatly to make a bit of room for stuffing if pits are small, and set aside on a platter for grilling. If grilling over flame, brush peaches with melted butter and set on medium-hot grill, away from direct flame. If grilling indoors (Foreman grill or the like), heat the grill and then rub with butter. Grill the peaches until fragrant and soft, but still firm. Remove from heat and fill each peach with a tablespoon or more of stuffing. Arrange on platter and drizzle with balsamic glaze. Serve warm or at room temperature.

Long days, balmy nights, bare feet and the smell of freshly mown grass: summer time at last. And now, with the rush of spring time planning and planting behind us, it’s time to begin reaping the garden’s rich rewards. Step inside the sapling fence and snip a few sprigs of fresh mint. There’s sun tea brewing on the terrace and later, fresh raspberries for homemade daiquiris.

Summer begins tonight at 7:09 pm ET, and though her days are long, they are also fleeting. Make time to pack a picnic from the garden, roll up a lavender-scented blanket and slip off to the lake. Oh, and don’t forget the sparklers for twirling in twilight’s blue hour. You’ve worked hard all spring, now it’s time to relax…

The Sugar Moon: A Maple Syrup Cocktail to Celebrate the End of Winter & March’s Full Moon at Perigee

With the full moon at perigee, Winter’s end and Spring’s beginning, it seems there’s plenty to celebrate this weekend. Last night —eager for a preview of tonight’s celestial events— I took a tour of the local Connecticut River Valley, seeking a spot to watch the big moon rising. I wasn’t disappointed. With the sky still blue and clear, La Luna rose proud and full on the horizon. What a spectacular dress rehearsal. And tonight —with beautifully clear conditions in Vermont— I am looking forward to bundling up and taking my front row seat on the terrace here at home.

Moonrise is at 7:23 pm ET tonight, and as the glowing orb inches over the horizon, objects in the foreground will have a tendency to magnify her already super-sized appearance (click here for an article explaining tonight’s “super-moon” at perigee from Space.com). With the silhouetted maple trees —swollen buds on full view— for inspiration, I decided to concoct a special end-of-winter/super-full-moon, cocktail. And at this moment of seasonal transition*, it seemed only natural to combine the sweet flavor of locally produced maple syrup with the earthy, warm taste of bourbon; creating a special, celebratory drink. Meyer lemon adds a perfect floral note to this delicious, golden cocktail, and offers the slightest hint of sour to contrast with maple’s rich sweetness.

So enjoy the evening, whatever your pleasure. And wherever you may be, I hope the skies are clear and the moon is bright and the new season brings you health and happiness

The Sugar Moon Cocktail

Ingredients

(makes one cocktail)

2 Ounces of Bourbon

1 Ounce Fresh Squeezed Meyer Lemon Juice

1 Ounce Grade A Vermont Maple Syrup (+/- for sweetness)

Lemon peel for garnish

Method

Pour maple syrup, bourbon and lemon juice into a cocktail shaker filled with ice. Shake, shake, shake. Strain into a chilled cocktail glass. Garnish with a bit of sliced lemon peel (or a twist).

Toast as the Full Moon Rises

Sugar Moon, Sap Moon, Lenten Moon, Crow Moon or Worm Moon. Call it What You Will… This One is Sure to be Super!

When it comes to holiday presents, I think there’s nothing quite as memorable and meaningful as a beautiful homemade gift. And a living gift, like a terrarium, keeps giving all year long. Terrariums are a great way to introduce children to the magic of horticulture, and they also make great gifts for city-dwellers –particularly plant-lovers residing in tiny apartments or working in sterile-looking cubicles. These gorgeous, easy-care gardens-beneath-glass are also wonderful gifts for those with physical limitations, disabilities or limited time.

Beautiful terrariums can be crafted on any budget, and containers and plants can be easily found online or in garden centers. If you like, you can even put together a kit of materials and box them up as a project to share with the recipient (or send one off by mail with a gift certificate to a local garden center or online plant retailer). A holiday terrarium can be decorated with miniatures —like the one above— before giving, or to celebrate the season and add a bit of humor or beauty to your home. Handblown glass orbs, tiny figurines or holiday ornaments all make fascinating additions to terrariums. For basic instructions on how to create a terrarium, click here to visit a tutorial post from last year. If you are constructing a permanent terrarium, be sure to use horticultural charcoal (available through many garden centers or online shops – see links below). If you are creating a temporary holiday display terrarium (particularly if the plants are pre-potted), you can skip this step. Horticultural charcoal will help to keep your terrarium fresh. Online Terrarium Resource List:

Terrain has some of the most beautiful and imaginative terrarium containers (and supplies) I have ever seen. This beautiful orchid house terrarium ($118), is made of wood and glass, with a liftable lid, and would make a dream gift for any gardener. I really want this one, and I am sitting on my fingers. It’s definitely on my Christmas list (hear that Santa?).

The gorgeous wardian case at the top of this post is from H. Potter. The company also has a great blog with terrarium-growing tips from author Tovah Martin. If you love terrariums as much as I do, I highly recommend checking it out.

Anchor Hocking 1 Gallon Jar with Lid ($9.99 from Amazon.com): This is the jar I most frequently use for beginner terrarium projects. It’s inexpensive, reusable and perfect for kids. Although it is glass, it’s heavy and not fragile. The gorgeous cloche below is more appropriate for a teenager or adult.

Glass Cloche with Base $58 from Terrain: This is an elegant choice for an orchid or a container of taller terrarium plants.

Amazon.com has an amazing variety of apothecary jars and glass containers. You can find almost anything you are looking for, from the budget-conscious to the extravagant.

Tovah Martin’s book The New Terrarium ($16.50 at Amazon.com) contains both inspirational projects and practical advice on how to create and care for a terrarium.

Fire and Ice

December evenings are often incomparably beautiful; the big, black sky serving as an endless canvas for celestial works of art. Last night, as I stood outside in the frosty quiet, I must have counted fifty shooting stars. The air was so crisp and clear, so still and cold, that every luminous dot in the universe seemed within finger’s reach. From the moment I stepped outdoors, stars began falling like heavenly, glowing raindrops.

Inspired by nights of starry, starry showers, I’ve begun filling heavy, glass bowls with clear, polished chips and tiny candles; bringing the magical glow of December’s sky down to earth. These fire and ice bowls are beautiful grouped on a mantle —surrounded by winterberries and greenery— or simply spaced on a dining table for a festive meal. But my favorite way to enjoy this bit of sparkle is on special nights out in my garden, when I tuck the shimmering bowls within stone walls and scatter them about the walkway…

To create this look, fill glass containers (round, square, or any other shape) with glass chips (often called lustre gems). Choose clear glass bits, as I have, or go bold with imaginative color combinations. You can find all of the inexpensive supplies you need at craft stores, florists shops, and many large department stores (or follow the links in this post for online sources). I used rounded candles for the displays featured here (like these, intended for floating in water) but you can just as easily use tea lights or samplers. I also like to use the glass bowls/chips indoors for floating arrangements, like the ones I featured here in summertime (click back here to check them out – winter arrangements with twigs and berries are equally beautiful). When using fire and ice bowls outside for special occasions, it’s very important to bring them back indoors after the party. If water collects, freezes and thaws inside the glass bowls, you will likely end up with a shattered mess on your hands. So, be sure to place your decorations in protected spots during inclement weather, and enjoy them indoors between parties.

An Explosive Night of Decadent Elegance at the Chilly, Secret Garden Icicle Ball     (Acer palmatum x dissectum ‘Seiryu’ and Juniperus squamata ‘Holger’)

My old friends Jack and Sugar were here again last night with their chilly and fabulously chic entourage. As usual, they danced and partied ’til dawn. From the look of things in the garden this morning —dozens of popped corks and champagne sprayed everywhere— they really outdid themselves. Countless scantily-clad ice-nymphs must have been in attendance; traipsing carelessly in and out of the flower beds and dropping their sequined underpinnings. When the sun rose, fashionable bits and pieces of attire could be found here and there —crystal-studded trinkets, sparkly shawls and brilliant baubles— flung far and wide. Shocked? Never. This happens every year {you do remember last year’s inaugural evening of excess, don’t you?}. Of course, the exact date and time of this exclusive nighttime debauchery always remains somewhat amorphous —just as the horti-couture fashions change from year to year — and those cold-hearted party-goers always seem to misplace my invitation…

Glamorous Holiday Gowns and Jewel Encrusted Accessories (Ilex verticillata ‘Red Sprite’ and Juniperus chinensis ‘Sargentii’)

The Icicle Ball began around midnight, and it lasted ’til sunrise; spilling out of the Secret Garden and into the wild forest beyond. And this year, those naughty and elusive frost-fairies must have lingered a bit longer than usual —tempting daylight in the shimmering tree tops— for in hasty departure they left behind some of their most beautiful accessories, jewelry and hand beaded gowns. Oh they’ll be back to reclaim their belongings -no doubt. You see, Jack and Sugar are regulars around here in the late autumn. They like to raise a wicked ruckus in the garden with their frosty-chic friends while waiting for the White Witch of Winter to arrive in her icy chariot.

I won’t lie, it’s disappointing to be left off Jack and Sugar’s guest list. But in spite of the fact that they consistently give me the cold shoulder, I never mind their outrageous hedonism. After all, they always leave me with the most delightfully decadent displays…

In this season of giving thanks, I would like to express my gratitude to all of you for following The Gardener’s Eden. Thank you for  your many delightful comments and email correspondence, and thank you for sharing this site with your friends. I truly love hearing from you, both here on the site, and also on The Gardener’s Eden’s Facebook and Twitter pages. I am so grateful for the many wonderful, new friendships growing from this lovely garden online. It takes time and care to build friendships, just as it takes time and care to build gardens. Thank you for joining me here.

Thank you to Tim Geiss, friend, photographer and IT wiz-beyond-compare. Without you, Tim, this blog would not exist, and I am ever-grateful for your your technical expertise, assistance, and all of your generous help. And thank you for sharing your amazing photographs —many taken specifically for this site— throughout the year. Savoring a Quiet Moment & Raising a Glass to Friendship and Good Company: Soul-Warming, Spicy Mulled Wine…

Mulled Wine and a Thanksgiving Toast to Friendship

The last few days and hours before a holiday are always a busy time. With all of the necessary preparations —shopping and cooking, packing and travel— it’s easy to lose sight of the more important aspects of our gathering amid all the hustle and bustle. Sometimes it can be helpful to remember that many hands make light the work; free up yourself, so that others may enjoy your company. A perfect pumpkin souffle is no match for a sweet kiss. Savor a few quiet moments with those you love, for those are the times we all remember most.

Do you know someone working a bit to hard, trying to please everyone but him or herself? Perhaps they might benefit from a back rub and a soul-warming serving of mulled wine beside the fire. Sit those worker bees down, pull off their shoes and hand them a glass. The napkin-ring polishing and guest-bedroom primping can wait. Time always speeds up around the holidays, and it’s up to us to pull the emergency break and slow it all down. Grab someone’s hand and take a walk through the forest or a stroll through the local park or garden. Tell a story. Share a secret. Give something of yourself to keep forever…

I love a glass of warm, mulled wine on a cold autumn evening. Last year I posted a recipe for mulling spices —which can be used for regular or spiked apple cider, and for mulled wine as well— but I have another, extra-special recipe I call ‘Mulled Autumn Wine’. This concoction is a little headier and takes a wee-bit more time prepare than the one I previously posted. Of course, I think it’s worth the wait. So if you know someone —or a group of someones— you’d like to spoil over the holidays, this might just do the trick. Feel free to tweak away at the ingredients – everyone seems to have their own special twist…

Soul-Warming Mulled Wine for the Holidays

Mulled Autumn Wine

Ingredients for Mulled Wine: (serves 8)

1            Bottle of good, dry red wine (750ml)

1 2/3     Ounces of good quality brandy

1 2/3     Ounces of Grand Marnier

1            Teaspoon superfine sugar

3            Teaspoons of honey (plus or minus to taste)

2            Ounces of fresh squeezed orange juice

2            Ounces of fresh squeezed lemon juice (Meyer if possible)

1/2         Orange, sliced into wheels

Mulling Spices:

1            Cheesecloth spice bag

2            Teaspoons freshly grated orange peel

1            Cinnamon stick, broken in half

4            Cloves (approximatey)

3            Cardamon pods, split open

3            Star anise

2            Bay leaves

Garnish: (for 8 glasses)

1            Lemon, sliced

24          Cloves

8            Cinnamon sticks

Directions:

Crack open cardamon pods and muddle lightly. Add all spices to a cheesecloth sack and toss in a large pot. Pour in the wine, brandy and Grand Marnier. Stir in the orange slices and the juices, and cover. Let the mixture sit for approximately 3 hours. About an hour an a half before you are ready to serve, remove the orange slices with a slotted spoon and bring the mixture to a very, very low simmer. Add the honey and sugar and stir to dissolve. Continue simmering for a total of an hour an a half (be careful to never let the wine overheat or boil).

In meantime, slice the lemon crosswise into 8 wheels. Stud each lemon wheel with a few cloves and garnish the individual glasses with a lemon wheel and cinnamon stick.

Remove the wine from the stove and pull out the spice sack with a slotted spoon.

Carefully divide the wine between the 8 glasses and serve warm.

Bringing Nature’s Beauty Indoors: Festive Autumn Centerpieces from Garden to Table…

Curious Dinner Companions: Dried Leaves of Sago Palm Add a Light, Golden Touch to Traditional Gourds and White Pumpkins

At long last, it seems that the season of feasts and festivities is finally upon us. And like many of you, I am looking for ways to bring the garden’s bounty to my dinner table: pumpkins, squash, carrots and potatoes from the root cellar; peas and berries from the freezer; and fresh greens and alpine strawberries from the hoop houses in my potager. But the garden offers endless delights for the eye as well as the taste buds, and I always like to dress up the house, holiday buffet, and even everyday place settings, with arrangements from the natural world.

From bittersweet-twined jars and low bowls filled with floating candles and cranberries, to luminous hurricane lamps surrounded by pinecones, crabapples and seedpods, I continue to bring a bit of nature’s beauty indoors throughout the late fall and winter. And in creating a few new festive, table-top scenes, it occurred to me that I should pull up some of last year’s photos and decorating ideas from the blog archive. Though many of us are living on tight budgets these days, with a little creativity, a beautiful centerpiece for the dinner table is always within reach. Autumn walks along riverbanks, train tracks and woodland paths last week revealed tangles of bright orange bittersweet, resin-tipped pinecones, bright red hollyberries and a jumble of seedpods amongst the tawny meadow grasses. Bring a bag or basket along next time you take a stroll through the park or walk the dog through the wastelands. You may be surprised and delighted by the natural curiosities you will find. And while it’s possible to spend a fortune on holiday decorations, I often find that bits of twine, recycled jars and old wine bottles topped with candles are just as pretty as more expensive ornaments.

“He Who Walks Behind the Rows”… Lost in a Labyrinth of Stalks & Tassels: Exploring the Art of the Corn Maze

“He Who Walks Behind the Rows”…

Clouds gather, dark and low on the horizon. The daylight is fading. You’ve been driving through miles of cornfields and back country roads. Suddenly, something  —a child?— darts across the cracked pavement and into the corn rows. Immediately, you pull over and step from the warmth of your car. A rush of cold air scrapes across your face; the rustle of cornstalks rising and dragging behind you in the wind.

Tentatively you call out, but there’s no answer. Were your eyes playing tricks on you after hours of travel? Why hadn’t you stopped for a break? Wait… What is that sound? You step from the grassy roadway margin, into the long, shadowy corn rows. There —there it is again— off in the distance. Is it a cry, or is it laughter? The voice of a child or an animal’s wail? Once more it rises from the stalks —pitching higher now— calling up from beyond the swaying tassels. And then… Silence. Your hair rises at the back of your neck. You pause, and —in a moment of instinct— rush breathlessly down the narrow pathway —heart pounding into your throat— racing against the twilight…

A quarter mile in, you hear a crack and you call out into the empty field – but there’s no answer. Turning toward the sound, you dash through the stalks to the left, then to the right. Racing down a wider path —breathless— you suddenly stop; eyes stinging from the rising dust. This must be a main corridor, but there’s no end in sight. There, blowing across the ground on the pathway ahead, you spot a piece of paper. As you unfold it —examining the wobbly dotted line— you wonder: is this a child’s drawing, an attempt at simplistic map? You clutch the torn paper —palms clammy-cold— and press forward. The map seems accurate, but then, there’s no indication of what lies ahead: a divide in the road…

One side seems smoother and a bit wider. Slowing down, you begin to stop and start; futile attempts to get your bearings. The sky is growing darker, and the path narrows again. All around you —above and to the sides, before you and behind— there is nothing but hollow stalks of corn. Then, straight ahead: an improbable staircase. Quickly, you scramble to the top…

As you near the highest point of the platform, your heart sinks. Taking in the monochromatic vista, you suddenly realize that your car, the road and the surrounding landscape have completely vanished. As far as the eye can see, there is nothing but an endless expanse of bleached stalks —knocking  to and fro — rattling like bones in the wind. Is there no way out? Will you ever be found? Wait. There it is again. A low and plaintive cry. Something is moving out there. Something is calling for you. Is it… Malachai ?

The  Story  Behind  The  Story:  Those  Amazing  Corn  Mazes  &  The  Farms  They  Help  Support

Mazes (sometimes called corn maizes or, historically, labyrinths) are believed to have originated in Europe, where they have been a popular form of amusement for centuries. Although mazes and labyrinths may be constructed using various materials —from grass and clipped hedges to earth and stone— most modern mazes are created with corn. In mid to late May, corn —usually special varieties selected for stalk strength and height— is planted in rows and later (usually in June) cut or tilled into patterns; creating elaborate designs and pathways in fields. Many years ago, patterns for labyrinths were drawn out on paper and cut by hand with sythes. Today, most mazes are cut with tillers or other machinery when the corn is knee-high (some farms use herbicides). Some modern maze designers use computer graphs and GPS coordinates to create elaborate grid patterns. However, many mazes, such as the walking puzzles pictured here —created by the MAiZE company based in Utah— continue to be designed and cut by hand.

My closest maze is located at the Gaines Farm —the bicentennial dairy farm pictured in the aerial photograph above— in nearby Guilford, Vermont. The Gaines Farm corn maze combines a MAiZE Co. designed labyrinth with haunted hayrides and other Halloween attractions every fall. Corn mazes are fun for kids and families of all ages, and visiting one is a great way to help support your local farm. Autumn corn mazes have become an important and growing source of revenue for small farms and agricultural communities throughout the United States and Canada. Maize labyrinths also continue to be popular in Europe —particularly England— and are a growing trend in other parts of the world as well. Farewell to summer! The autumnal equinox will occur at 3:09 am UTC (GMT) on September 23rd this year. So —depending upon where you live—autumn will officially begin sometime this evening, September 22nd, or in the wee hours of September 23rd. Here in New England, fall will begin at 11:09 PM EDT. Coincidentally, the Harvest Moon will be full tomorrow, on the first day of autumn. Yesterday evening, I caught the beautiful, glowing orb, just as it rose –nearly full— above the treetops at twilight. Oh, what a beauty…

As if in anticipation of a grand, autumn party, the northeastern fields and forests have already begun to change into traditional fall costume, greeting the equinox with the all the rich hues and glorious textures of the season. Fall truly is my favorite time of the year, but it always seems to pass too quickly. So, I try to soak up as much natural beauty as I can, taking daily walks through local fields and forests, and my own woodland trails here at Ferncliff. I began my week with a visit to Scott Farm in Dummerston, Vermont (see my post about this beautiful Vermont orchard by clicking here). In anticipation of the autumnal equinox, I decided to pick up some heirloom apple cider, and create spiced-apple martinis; the perfect cocktail to celebrate autumn’s arrival. Heirloom apples have such delightful colors, textures and flavors; ranging in hue from light gold to deepest violet and varying in taste from tartest-of-tart to honey-sweet. Zeke Goodband’s Heirloom Apple Cider, Lemon and Warm Spices

Zeke Goodband’s apple cider is the best I have ever tasted, and it makes the most delicious base for an autumnal twist on the traditional apple-martini. The golden color of this cocktail is beautifully enhanced by the addition of a pretty, ruby-red, heirloom Dolgo crabapple garnish. Of course, if Dolgo crabapples are nowhere to be found, any tiny red apple —or slice dipped in lemon juice— will do. But, if you prefer a non-alcholic drink, travel back to my post on hot mulled apple cider, another delicious way to enjoy this fruit of the season!

Spiced Heirloom Apple Cider Martini

Ingredients for 2 Cocktails (multiply or divide to suit):

4 ounces heirloom apple cider

4 ounces excellent quality, ice-cold vodka

2 ounces excellent quality brandy (apple brandy if you like)

2 ounces orange liquor

1 ounce fresh squeezed Meyer lemon juice

2 cinnamon sticks and/or 1 tsp freshly ground cinnamon (optional)

2 tsp artisan honey

Directions:

Place all ingredients in a jar and cover.* Shake well to mix before serving. When ready to serve, pour the mixture into a cocktail shaker with crushed ice. Shake and pour into 2 chilled martini glasses. Garnish with a crab apple (or slice of apple) and a cinnamon stick. Serve.

*The basic cocktail may be mixed a few hours ahead (in a large jar) if serving cocktails at a party. Keep well chilled and shake cocktails in ice individually before serving.

Celebrating Fourth of July Weekend: Garden-Fresh Strawberry-Mint Mojitos & Flowers Exploding in the Night Sky…

Look at those great big sparklers! Oh yes, I do love a little pyrotechnic excitement now and again – don’t you? In honor of America’s birthday, I’m going out to see fireworks tonight, and –goofy gal that I am– I’m pretty excited about it. To me, fireworks look like gigantic, technicolor flowers, exploding in the night sky. Wouldn’t you agree? Well, I know not everyone will get what I’m driving at here, so I put together a few daytime vs nighttime kabooms and kablams (photos below) for a bit of comparison. Even hand-held sparklers look like flowers to me; so much so, in fact, they seem like the perfect fizzy bridal bouquet (well, I do suppose you would have to wear a flame-retardent gown, and say your vows pretty fast – now wouldn’t you?).

Fourth of July is one of my two favorite holidays, (think you can guess the other?), and I’m about to pack up my bag and head on down the dusty road with some treats for my evening companions. Since Mentha villosa (Cuban mint) and fresh strawberries are plentiful in the garden, I figured I might as well whip up a few fresh strawberry-mint mojitos later on tonight. But of course, I can’t leave without sharing the recipe with you.  So scroll down past the floral and pyrotechnic explosions below… ‘Till you reach the cocktail recipe. Enjoy! Strawberry-Mint Mojito

Ingredients (makes one cocktail):

6-8     strawberries washed and quartered, plus extra for garnish

1-2     tsp white sugar

1/2     lime cut into quarters

4         sprigs of mint – (pinch first 3-4 sets of tender leaves and tip)                             {ideally Mentha villosa & p.s don’t stint on the mint!}

2         ounces of fine Puerto Rican white rum*

1/2     cup of cracked, not crushed, ice cubes

Club soda to top glass

Directions:

Drop the mint into bottom of a cocktail shaker cup and crush the herbs with a muddler or the back of a wooden spoon to release the oil. Add the sugar, and squeeze in the juice of the lime wedges, next, add the strawberries and mash together well. Stir in the rum*. You can toss in the lime rinds if you like. Add the cracked ice cubes to the cup – cover and shake well. Pour the contents into a frosted glass and top with club soda. Before serving, garnish the glass with a fresh strawberry wedge and a sprig of mint. Serve.

*This drink is also fantastic without rum. You may wish to add more strawberries and a tiny bit more sugar if you are excluding the rum. Or add a touch of good quality, artificial rum flavoring instead.
